- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Add diced tomatoes with their juice, vegetable broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add drained and rinsed cannellini beans and simmer for another 5 minutes.
- Using an immersion blender, partially blend the soup, leaving some texture (alternatively, transfer half the soup to a blender, blend until smooth, then return to the pot).
- Stir in fresh basil.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with a drizzle of olive oil and grated Parmesan cheese, if desired.
