Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add diced tomatoes with their juice, vegetable broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add drained and rinsed cannellini beans and simmer for another 5 minutes.
  7. Using an immersion blender, partially blend the soup, leaving some texture (alternatively, transfer half the soup to a blender, blend until smooth, then return to the pot).
  8. Stir in fresh basil.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with a drizzle of olive oil and grated Parmesan cheese, if desired.
