Instructions
- Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Drain and rinse chickpeas. Pat dry with paper towels.
- In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, and pepper. Pulse until well combined but still slightly chunky.
- Transfer mixture to a bowl and stir in flour and baking powder.
- Form mixture into small patties (about 2 tbsp each) and place on prepared baking sheet.
- Brush patties lightly with olive oil.
- Bake for 25-30 minutes, flipping halfway, until golden brown and crispy on the outside.
- Meanwhile, make tahini sauce by combining tahini, lemon juice, garlic, salt, and water in a small bowl. Whisk until smooth.
- Serve falafel warm with tahini sauce drizzled on top or on the side for dipping.
