- If using wooden skewers, soak in water for at least 30 minutes before grilling.
- Cut halloumi cheese into 2cm cubes.
- Cut zucchini, bell peppers, red onion, and cherry tomatoes into similar-sized pieces.
- Thread vegetables and halloumi alternately onto skewers.
- In a small bowl, mix olive oil with dried oregano, lemon zest, salt, and pepper.
- Brush skewers with the olive oil mixture.
- Preheat grill or grill pan to medium-high heat.
- Grill skewers for 2-3 minutes per side, or until vegetables have charred marks and halloumi is golden.
- Serve immediately, garnished with fresh herbs and a squeeze of lemon juice.
