Instructions

  1. If using wooden skewers, soak in water for at least 30 minutes before grilling.
  2. Cut halloumi cheese into 2cm cubes.
  3. Cut zucchini, bell peppers, red onion, and cherry tomatoes into similar-sized pieces.
  4. Thread vegetables and halloumi alternately onto skewers.
  5. In a small bowl, mix olive oil with dried oregano, lemon zest, salt, and pepper.
  6. Brush skewers with the olive oil mixture.
  7. Preheat grill or grill pan to medium-high heat.
  8. Grill skewers for 2-3 minutes per side, or until vegetables have charred marks and halloumi is golden.
  9. Serve immediately, garnished with fresh herbs and a squeeze of lemon juice.
