  2. Add minced garlic, cumin, paprika, and oregano. Cook for 1 minute until fragrant.
  3. Add diced tomatoes with their juice, vegetable broth, chickpeas, salt, and pepper. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally.
  5. Add spinach and stir until wilted, about 2 minutes.
  6. Stir in lemon juice.
  7. Serve hot, garnished with fresh parsley and a drizzle of olive oil if desired.
