Instructions

  1. Cook orzo according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooled orzo, roasted red peppers, olives, red onion, cucumber, cherry tomatoes, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.
  4. Pour dressing over salad and toss to combine.
  5. Stir in fresh herbs.
  6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
