A lighter version of the classic Greek soup with chicken, rice or orzo, and a lemony egg broth. Creamy without cream, and full of protein.

Ingredients

Instructions

  1. In a pot, bring chicken broth to a simmer.
  2. Add diced chicken and rice/orzo. Cook until rice/orzo is tender (follow package time).
  3. In a bowl, whisk together eggs and lemon juice until frothy.
  4. Slowly add 1 cup of hot broth to egg mixture, whisking constantly.
  5. Pour the egg-broth mixture back into the pot, whisking constantly.
  6. Heat on low until slightly thickened (do not boil).
  7. Season with salt and pepper.
  8. Serve hot, garnished with fresh dill if desired.
