Ingredients

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Cut bell peppers in half lengthwise and remove seeds and ribs. Place cut-side up in a baking dish.
  3. Heat 1 tbsp olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes.
  4. Add diced zucchini and garlic, cook for another 3 minutes.
  5. In a large bowl, combine cooked quinoa, sautéed vegetables, diced tomatoes, chopped olives, feta cheese, oregano, lemon zest, salt, and pepper.
  6. Stuff each pepper half with the quinoa mixture.
  7. Pour 120ml water into the bottom of the baking dish.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 10 minutes, until peppers are tender and filling is heated through.
  10. Serve hot, garnished with fresh herbs if desired.
