Instructions
- Preheat oven to 190°C (375°F).
- Cut bell peppers in half lengthwise and remove seeds and ribs. Place cut-side up in a baking dish.
- Heat 1 tbsp olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes.
- Add diced zucchini and garlic, cook for another 3 minutes.
- In a large bowl, combine cooked quinoa, sautéed vegetables, diced tomatoes, chopped olives, feta cheese, oregano, lemon zest, salt, and pepper.
- Stuff each pepper half with the quinoa mixture.
- Pour 120ml water into the bottom of the baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes, until peppers are tender and filling is heated through.
- Serve hot, garnished with fresh herbs if desired.
