  1. In a bowl, whisk together whole wheat flour, baking powder, and salt.
  2. In a separate bowl, whisk egg, milk, and 1 tbsp olive oil.
  3. Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour or scoop batter onto the griddle (about 60ml per pancake).
  6. Cook for 2-3 minutes per side, until golden brown and cooked through.
  7. Serve pancakes topped with a dollop of Greek yogurt and a drizzle of honey.
