5.0 ml Olive oil
50.0 g Onion, diced
50.0 g Red bell pepper, diced
1.0 clove Garlic, minced
200.0 g Crushed tomatoes
0.5 tsp Paprika
0.25 tsp Cumin
1.0 large Egg
5.0 g Fresh parsley, chopped
1.0 pinch Salt and pepper
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened (5-7 minutes).
- Add garlic, cumin, and paprika, cook for 1 minute more until fragrant.
- Stir in diced tomatoes, salt, and pepper. Bring to a simmer, then reduce heat and let sauce thicken slightly (5-8 minutes).
- Make two wells in the sauce with the back of a spoon. Crack an egg into each well.
- Cover the skillet and cook for 5-8 minutes, or until egg whites are set but yolks are still runny.
- Sprinkle with fresh parsley or cilantro.
- Serve immediately, perhaps with a side of whole-wheat pita.
